Queen Cakes Recipe

A rather wintery day and a public holiday - let's eat! These cakes are so simple to make, quick to bake and require just a few basic ingredients. Recipe courtesy of the Edmond's Cookery Book.

Ingredients:
125g butter
125g sugar
2 eggs
175g flour
1 t baking powder
50g currants, sultanas or dried cranberries
(alternatively go tropical and use the grated zest of a lime and 1/4 cup coconut) 

Method:
Cream butter and sugar, beat in eggs one at a time. Sift in flour and baking powder, stir in fruit.

Place in patty pans and bake at 200ºF / 400ºC for 10-12 minutes. Watch closely so as not to overcook them like we did! (still very yummy though)

Cool and devour. Makes 12 - 15
